Almond Flour Blueberry Pancakes - Recipe Diaries (1)

Sometimes being a food blogger, you have your content planned out but then that week you go to test the recipe and it isn’t great. I’m not going to share crummy recipes on this page with you guys and hey it’s ok when your schedule doesn’t go as plan. A lot of my time is being spent planning out content for this blog. Plus, I wasn’t really too excited to post the recipe that I was originally going to make. That is why I’m only going down to T, TR posts from now on.

How many net carbs are in almond flour pancakes?

Lately, I’ve been tracking my calories and carbs in myfitnesspal and guys (still down 8 pounds). With these almond flour pancakes, there are only 2 net carbs per pancake! I’ve been eating way too many carbs lately and sometimes I just get sick of eating eggs for breakfast and these pancakes are a great keto/low carb substitute.

Keto Blender Pancakes

The first time I made these pancakes I just mixed the batter together until everything was combined with a spatula. The result was grainy, kind of gritty, pancakes. They were still good but not really pretty at all. A total of 6 pancakes were produced using a ¼ cup. I decided to test this recipe again after I had read from another blogger that blending your pancake batter in a food processor or food processor with this type of flour results in much better pancakes and how true that was! The blended pancakes came out almost perfect! They were nice and thick and the batter spread out better on the griddle. Guys, blend these pancakes, do not attempt to mix this together by hand!

How to Make Pancakes with Almond Flour

Almond flour isn’t cheap but the taste is great and you can make it at home for a lot less. I like it better than coconut flour. If you are following Weight Watchers almond flour isn’t a low point flour option but if you still want to give these a try go for it. I like Bob’s Red Mill Almond Flour.

Make almond flour in a food processor or high powered blender: Place a cup of raw or blanched almonds in the bowl of a food processor fitted with the blade attachment and pulse for 50-60 times in 1-second increments. Stop and scrape the sides of the bowl of the processor every 10 seconds to make sure that they are ground evenly.

Almond Flour Allergies

I know some people will ask what can be substituted for almond flour. If you are allergic to certain types of flours it is just best to look up pancake recipes online with flours YOU KNOW that you can eat. Makes sense right? By the time I actually get to a question that I get from a reader (I’m not always online or checking my blog comments) you can actually look this up yourself and it is much faster.

Can you make pancakes with other flour?

You can substitute a 1:1 ratio of regular all-purpose flour to almond flour. Using flours such as coconut flour might get a little tricky with the substitutions and might not be the same amount if you try to use that in this recipe.

Keto Almond Flour Pancakes - Ingredients

This recipe only requires 6 simple ingredients. The dry ingredients are almond flour, baking soda and salt. The wet ingredients are unsweetened almond milk, eggs, and vanilla.

Some Keto or Low carb pancake recipes call for sugar substitutes and if you like to add those in feel free to. For this pancake recipe, a sugar substitute is not needed to give it more sweetness. Sugar-free maple syrup and any type of berry is great to put on top of your pancakes if you think the pancakes are too bland.

Yep, either way, works! Just make sure the pancakes are cool before storing.

Hi, I was wondering about making the pancakes ahead and storing them. Have you tried this? I’m just thinking about freezing or refrigerating them for future use

  3. Jenna says

I think you're on the wrong blog. I don't have a recipe for that on this site.

Hi Jenna, I’m really sorry to post on an unrelated recipe, but I’m hoping you’ll see this. I’m pretty sure I ran across a Salisbury steak meatball recipe on your site, but it didn’t make it onto my menu that week. Now I can’t find it anywhere! Will you please post the link? Thank you.
