Located in the upper right quadrant of the abdominal cavity and just below the diaphragm, the liver is one of the vital organs of the human body that is responsible for a multitude of important functions. This triangular shaped organ is the largest internal organ of the human body. Some of the primary functions of the liver include regulation of fat metabolism, synthesis of bile, production of proteins required for blood clotting, and detoxification of the body.

Fatty liver disease is characterized by the deposition of excess fat in and around the liver, and can have an adverse effect on its functioning, giving rise to a number of ailments. This condition is quite common among people across the globe, particularly in overweight people who are above the age of 30.

When the liver is unable to breakdown fat at its normal rate, this fat gets accumulated in and around the liver cells, resulting in fatty liver. Other than obesity, this condition can be caused due to factors including consumption of drugs or alcohol, malnutrition and health issues such as diabetes.

Fatty liver disease does not cause any serious damage to the body in the initial stages, however, it is important to keep the condition under control to prevent further health complications. Unfortunately, there is no specific treatment to cure this condition. Hence, people diagnosed with fatty liver should consume a healthy diet to keep the condition under control.

A fatty liver diet menu typically includes foods that are low in saturated fats and calories, along with high fiber content. Since obesity is the most common cause of fatty liver disease, it is extremely important to reduce the body weight by consuming a healthy diet. This low-fat and low-calorie diet can help combat the symptoms in most cases.

Foods high in fiber and low in fats include whole grains, beans, and cereals. A typical high fiber diet consists of foods such as brown rice, bran bread, bulgar wheat, kidney beans, chickpeas, barley, and plenty of fresh fruits and vegetables.Red meats, pork, bacon, and fat fish such as tuna and salmon should be avoided. Instead, you can have skinless chicken or turkey, lean beef, and lean fish. Consumption of dairy products including milk, cheese, butter, cream, and margarine also should be limited.

Recipes for Fatty Liver Diet

Spanish Rice Soup

Ingredients:

  • ¾ cup raw brown rice
  • 2 carrots, sliced
  • 2 cups celery, chopped
  • 1 onion, chopped
  • 1 red/green bell pepper, chopped
  • 2 tomatoes, pureed
  • 2 cloves garlic, chopped
  • Mild green chilies, chopped
  • 2 teaspoon cumin, ground
  • 1 teaspoon chili powder
  • 2 tablespoons of paprika

Directions:
Bring water to boil in a large pot. Add rice, carrots, celery, onion, garlic and one tablespoon of paprika and continue to boil. Cover the pot, reduce the heat and simmer about half an hour. Add water if needed. Now, add the remaining ingredients and simmer 15 to 20 minutes, until the rice is tender. Your healthy and delicious rice soup is ready! Serve hot!

Bean Salad

Ingredients:

  • 1 cup pinto beans
  • 1 cup black beans
  • 1 cup Garbanzo beans
  • 1 cup red kidney beans
  • 1 bunch cilantro, chopped
  • 1 onion, chopped
  • ½ cup seasoned rice vinegar
  • Salt
  • Pepper

Directions:
Rinse all the beans well and then strain them. Place them in a large bowl. Add chopped onion to the beans. Now, add the rice vinegar and stir well. Sprinkle salt and pepper and your bean salad is ready. You could also add chopped green beans, olives, or cooked brown rice to the above recipe to enhance its taste.

Chicken Salsa

Ingredients:

  • 1 lb. skinless and boneless chicken breast, cut in one inch pieces
  • 1 large onion, chopped
  • 1 large red/green pepper, chopped
  • 2 tomatoes, chopped
  • 1 can kidney beans, rinsed and drained
  • 3 cloves garlic, minced
  • 1 cup medium salsa
  • 1 bunch broccoli
  • Fresh cilantro
  • Olive oil
  • Salt
  • Pepper

Directions:
In a large non stick skillet, heat 1 tablespoon olive oil. Sauté garlic and onion for about 3 minutes, until they turn tender. Add pepper and sauté again for two minutes. Now, add the remaining ingredients and bring the mixture to boil. Reduce the heat, cover and simmer five minutes, or until chicken is cooked. Serve it with rice, noodles or mashed potatoes.
