These low carb pigs in a blanket are made with high quality sugar-free hot dogs and a fathead dough “blanket”, for a keto version that tastes just like the original. People have been telling me for quite some time that they’ve been wrapping the dough from my keto bagel recipe around hot dogs. So, I wanted to share this keto pigs in a blanket recipe to show you exactly how to do it. These are just plain fun… and delicious!

Just like my bacon wrapped hot dogs, kielbasa and sauerkraut, and fried cabbage and sausage, these low carb fathead pigs in a blanket are made with Garret Valley Farms hot dogs. I love their sausages and bacon because they are made from premium cuts of pork that are raised humanely and never given antibiotics. Plus, they are sugar-free and use natural ingredients.

These almond flour pigs in a blanket are made with these simple ingredients:

  • Garrett Valley Farms Sugar-Free Grass Fed Hot Dogs – These are easily the best hot dogs out there! High quality, without the iffy ingredients.
  • Almond flour – Use a super-fine, blanched almond flour like this for best results.
  • Baking powder – Make sure it’s fresh so that it works properly.
  • Xanthan gum – Optional, but gives great “chew” to the “blanket”.
  • Eggs – Use large size. I prefer cage-free when possible, but any kind will do.
  • Mozzarella cheese – I like to buy pre-shredded to save some time, but you can also shred it yourself. Be sure it’s the low-moisture kind.
  • Cream cheese – Use full-fat for best results.
  • Sesame seeds

How To Make Keto Pigs In A Blanket

  • Make low carb dough for pigs in a blanket. In a large bowl, stir together almond flour, baking powder, and xanthan gum. Stir in egg until uniform and set aside.

  • Melt cheeses. In a medium bowl, combine shredded mozzarella and cubed cream cheese. Microwave for 90 seconds, stirring halfway through.

  • Mix dough. Before cheese cools, add to almond flour mixture and knead with your hands until a uniform dough forms, without streaks. If the dough is sticky, refrigerate to make it easier to work with.

  • Assemble. Roll out dough for low carb pigs in a blanket into a thin rectangle, about 1/4 inch thick. Cut into 8 long strips…

  • Brush. Whisk egg and brush over pigs in a blanket. Sprinkle with sesame seeds, lightly pressing to help them stick.

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.

  2. In a large bowl, stir together the almond flour, baking powder, and xanthan gum, if using. Stir in 1 egg, until uniform. Set aside.

  3. In a medium bowl, combine the shredded mozzarella and cubed cream cheese. Microwave for 90 seconds, stirring halfway through. Stir again at the end until well incorporated. (You can also heat in a double boiler on the stove if you prefer.)

  4. Quickly before the cheese cools, add the melted cheeses to the almond flour mixture and knead with your hands, until a uniform dough forms, with no streaks.

  5. If the dough is sticky, refrigerate for 30-60 minutes, until it’s more manageable.

  6. Roll the dough into a thin rectangle, about 1/4 inch (.64 cm)thick. Cut the rectangle into 8 long strips, about 1/2 to 1 inch (1.27 to 2.54 cm) wide, then wrap them around the hot dogs. Place onto the baking sheet.

  7. In a small bowl, whisk the remaining egg. Brush the pigs in a blanket with the egg. Sprinkle with sesame seeds and press gently to help them stick.

  8. Bake for about 15 minutes, until golden brown.
